Fresh wild-caught Monchong fillet (Sickle Pomfret) harvested from Hawaiian waters. This premium fish features highly transparent, clear white flesh with pinkish tones and a firm texture with moderate flavor. Monchong has a high oil content and excellent shelf life, making it ideal for various cooking methods.
Line-caught using sustainable longline or deepwater handline methods, typically from depths greater than 900 feet near seamounts. Prime market fish range from 12 to over 25 pounds. The high oil content makes Monchong particularly well-suited for grilling, though it also excels when broiled, sautéed, baked, or prepared tempura-style.
