Fresh wild whole onaga, also known as longtail red snapper or ruby snapper (Etelis coruscans), is a premium Hawaiian deep-sea fish prized for its delicate flavor and beautiful brilliant red color. This whole fish features clear, light pink flesh that is soft and moist, making it ideal for sashimi, baking, steaming, and sautéing.
Onaga is harvested exclusively with vertical hook-and-line gear from deep waters at 600 to 1,000 feet. Most fish caught off the Hawaiian Islands range from 1 to 18 pounds. Fish caught during the winter months tend to have a higher fat content, yielding the best sashimi during the fall and winter season. Onaga is one of the species that make up Hawaii's prized "Deep 7" bottomfish group and is traditionally served at Japanese ceremonial occasions such as New Year celebrations and weddings.
Hawaii longtail red snapper is an excellent source of healthy, extra-lean protein. It is low in saturated fat and sodium, and rich in niacin, vitamin B6, vitamin B12, phosphorus, and selenium. It provides approximately 875 mg of omega-3 fatty acids (DHA and EPA) per 4-ounce serving.
