Fresh wild-caught Opakapaka (Pristipomoides filamentosus), also known as Hawaiian Pink Snapper, sold whole by the pound. Sourced from U.S. waters, primarily the Hawaiian Islands, where this deepwater reef fish is prized as Hawaii's premium snapper.
Opakapaka has lean, light pink flesh with a translucent sheen and a clean, sweet, delicate flavor. It is versatile in the kitchen and well-suited for baking, broiling, grilling, sautéing, steaming, poaching, and deep frying. Fish caught during winter months have a higher fat content, making them particularly excellent for sashimi and sushi preparations. Average market weight ranges from 3 to 12 pounds.
