Fresh serrano chile peppers from the mountainous regions of Mexico, sold in a 5-pound bulk package. These medium-heat peppers range from 10,000 to 23,000 Scoville heat units, making them significantly hotter than jalapeños but milder than habaneros. Serranos measure 2 to 4 inches long with a curved shape and bright green color that matures to red, brown, orange, or yellow.
These versatile peppers feature a crisp texture with thin walls and a bright, grassy flavor when green that develops into a smoky, earthy sweetness when red. The heat has a delayed onset, building gradually after the initial bite. Much of the heat is concentrated in the seeds and inner membrane, which can be removed for a milder experience.
Ideal for fresh salsas, pico de gallo, sauces, marinades, and chili. Can be eaten raw in salads, sandwiches, and soups, or cooked by roasting or smoking to enhance their flavor. Popular for pickling due to their crisp texture and bright flavor that pairs well with vinegar tang. Not recommended for stuffing due to their slim cavity and thin walls. When handling, use kitchen gloves once cut to avoid capsaicin oil discomfort.
