Fresh wild Dover sole is a premium flatfish prized for its delicate, mild, and sweet flavor with dense, firm texture. This wild-caught saltwater fish is harvested from the Atlantic Ocean, living at the bottom of shallow oceans where it feeds on mollusks, crustaceans, and ocean worms. Dover sole's pristine, pearly white flesh maintains its color when cooked and easily absorbs complementary sauces and preparations.
Known for its exceptional nutritional profile, Dover sole is remarkably low in fat with high protein content. Each 100-gram serving contains 19 grams of protein and only 91 calories, with minimal total fat (1.19 grams) and low saturated fat content. The fish is rich in essential nutrients including omega-3 fatty acids (EPA and DHA), vitamins A, E, D, and B-complex vitamins (B1, B2, B3, B5, B6, B9, B12), plus minerals such as calcium, iron, potassium, selenium, and sodium. Dover sole contains low amounts of methylmercury and is classified by the FDA as a "Best Choice" for pregnant women and children.
This versatile fish can be prepared through various cooking methods including steaming, poaching in white or red wine, pan-frying, grilling, or broiling. The classic French preparation sole à la meunière features the fish lightly floured and pan-fried with brown butter, lemon, and parsley. Due to its thin, delicate fillets, Dover sole is best suited to gentle cooking methods that prevent overcooking and help maintain its tender, moist flesh. It makes a beautiful presentation when deboned tableside in fine dining establishments.
