Wild warm water lobster tails sourced from Brazil, sold by the pound and previously frozen for optimal freshness. These Caribbean Spiny Lobster tails (Panulirus Argus) feature tender, slightly sweet meat ideal for grilling, broiling, steaming, or boiling. Warm water lobsters grow faster in tropical waters, producing generous tail portions with a distinctive seafood flavor. Each tail typically weighs around 4 ounces, with packages containing multiple tails sold at approximately $25-27 per pound.
For best results, thaw overnight in the refrigerator or in cold water for 30-45 minutes. Butterfly the tail by cutting through the shell lengthwise with kitchen shears, then lift the meat to rest on top of the shell. Cook using the 1-minute-per-ounce rule: an 8 oz tail takes about 8 minutes to boil or steam. Target an internal temperature of 140-145°F for perfectly cooked lobster with opaque white meat. Serve with melted garlic butter, fresh lemon juice, and your favorite sides like corn on the cob, baked potatoes, or transform into classic lobster rolls.
