Pacific halibut (Hippoglossus stenolepis) is one of the largest flatfish species in the world, prized for its clean, delicate taste and versatility in the kitchen. The fillets are ready to cook and pair well with a wide range of seasonings and preparations. Grill over medium-high heat for 4–5 minutes per side, bake at 375°F for 15–20 minutes, pan-sear in olive oil for 3–4 minutes per side, or broil 4 inches from the heat source for 4–6 minutes per side. Avoid overcooking to preserve the naturally tender, flaky texture.
