Costco's fresh whole Coho salmon is sold by the pound and arrives whole with head and tail intact, making it ideal for roasting, grilling, or smoking. Farm-raised Coho salmon (Oncorhynchus kisutch) offers a milder, lighter flavor compared to wild-caught varieties, with firm pink-orange flesh and a moderate fat content that keeps the fish moist during cooking.
Coho salmon is a Pacific salmon species prized for its balance of rich flavor and leaner profile relative to Atlantic salmon. Farm-raised Coho provides a consistent supply year-round and is well-suited for a variety of preparations including baking whole with aromatics, filleting at home, or presenting as a centerpiece dish. The whole fish format allows for maximum versatility — the carcass can be used for stock or fumet after portioning.
As with all fresh fish from Costco's meat and seafood department, this product is sold fresh and should be used within 1–2 days of purchase or frozen immediately. Store refrigerated at 32–38°F and keep on ice until ready to use.
