Fresh, wild-caught mahi mahi fillet sold by the pound from Costco's seafood counter. Mahi mahi, also known as dolphinfish or dorado, is a tropical and subtropical species prized for its mild, slightly sweet flavor and firm, dense texture that holds together well during cooking. The meat is lean and white with a pinkish hue when raw, turning flaky and opaque white when cooked.
This versatile fillet works well across a variety of cooking methods including grilling, baking, pan-searing, broiling, and poaching. It is particularly popular for fish tacos, sandwiches, and served alongside fresh mango salsa or over rice. Season simply with salt and pepper, or use a blackening seasoning or Baja-style taco rub. Grill over medium-high heat for approximately 7 minutes, bake at 400 degrees Fahrenheit for 10 to 12 minutes, or poach gently in marinara sauce for 5 to 7 minutes until the internal temperature reaches 140 to 158 degrees Fahrenheit.
