Fresh wild Pacific blue marlin fillet, also known as kajiki in Hawaii or a'u in Hawaiian. This premium wild-caught fish features firm, meaty texture similar to swordfish with a rich, full flavor. The flesh color ranges from light golden-orange when raw to off-white when cooked, with pink variations depending on the fish's fat content. Blue marlin are line-caught from Pacific waters and typically range from 80 to 300 pounds in round weight, though they can reach over 1,600 pounds. Best suited for grilling, searing, pan-frying, or smoking, this fish is also excellent for raw preparations like poke and sashimi when high in fat content.
