Whole wild-caught opakapaka (Hawaiian pink snapper, Pristipomoides filamentosus) sourced from the United States, sold fresh by the pound. Opakapaka is widely regarded as Hawaii's premium snapper, prized for its clear, light pink flesh and exceptionally delicate flavor. Winter-caught fish carry a higher natural fat content, making them particularly well-suited for sashimi preparation.
Harvested exclusively using deepwater handline gear with power reels at depths between 180 and 600 feet, opakapaka is a low-impact, line-caught fish available year-round with peak landings from October through February. Individual fish range from 1 to 18 pounds, and whole fish are ideal for steaming or baking. The firm yet delicate flesh also lends itself to poaching, sautéing, raw preparations such as sashimi, and soups. Opakapaka is an excellent source of lean protein, low in saturated fat and sodium, and rich in niacin, vitamins B6 and B12, phosphorus, selenium, and approximately 275 mg of omega-3 fatty acids (DHA and EPA) per 4-ounce serving.
