Costco's fresh wild Pacific Blue Marlin (Makaira nigricans) is sold per pound as a premium, wild-caught fillet sourced from the waters around Hawaii and other U.S. Pacific Islands. Also known as Kajiki or A'u, this prized billfish is sustainably managed under NOAA Fisheries regulations and responsibly harvested using longline and trolling methods. Peak seasonal availability runs from June through October.

Blue marlin delivers a firm, meaty texture comparable to swordfish, with a rich, full flavor that is slightly more pronounced than ahi tuna. The raw flesh is light golden-orange, turning off-white when cooked. Specimens with higher fat content develop a naturally lacquered appearance and are ideal for raw preparations such as poke and sashimi.

This versatile fish suits a wide range of cooking methods including grilling, sautéing, broiling, and smoking. Simple, high-heat preparation with salt, pepper, and a squeeze of lime allows its natural flavors to shine, though it holds its own equally well with bold sauces, fresh salsas, and pungent herbs. Blue marlin is an excellent source of lean protein, low in saturated fat and sodium, and provides vitamin B12, vitamin B6, niacin, and selenium, along with approximately 200 mg of omega-3 fatty acids (DHA and EPA) per 4-ounce serving.
