Opakapaka, also known as Hawaiian Pink Snapper (Pristipomoides filamentosus), is a highly prized deep-water fish caught wild in the Pacific Islands region, particularly around the Hawaiian Islands. Sold whole and priced per pound, this fish is sourced fresh from sustainable wild fisheries using vertical hook-and-line gear with power reels — a low-impact, selective fishing method.
The flesh is clear and light pink with a firm texture and delicate, mild flavor, earning opakapaka its reputation as Hawaii's premium snapper. Fish range in size from 1 to 18 pounds and are found at depths between 180 and 600 feet. Fish caught during winter months (October–February) tend to have higher fat content, making them especially prized for sashimi.
Smaller whole fish are traditionally prepared by steaming or baking. Opakapaka is also excellent for sashimi, soups, poaching, and sautéing. It is an excellent source of lean protein, low in saturated fat and sodium, and rich in niacin, vitamin B6, vitamin B12, phosphorus, and selenium, with approximately 275 mg of omega-3s (DHA and EPA) per 4-ounce serving.
