Fresh wild Ono is a premium Hawaiian fish, also known as Wahoo (Acanthocybium solandri), prized for its clean, mild flavor and excellent eating quality. Sold fresh by the pound as a fillet, this wild-caught fish comes from the warm Pacific waters around Hawaii and other tropical and subtropical regions.
Ono features firm, white to pale pink flesh with a moderately flaky texture and a slightly sweet, delicate flavor with low fishiness. The fish has a moderate fat content that keeps the fillets moist during cooking, making it highly versatile in the kitchen. The name "Ono" means "delicious" in Hawaiian, reflecting its long-standing reputation as one of the finest eating fish in the Pacific.
Ono is well-suited for grilling, sautéing, pan-searing, baking, and broiling. Its firm texture holds up well on the grill without falling apart, and it pairs excellently with citrus-based marinades, garlic butter, or tropical salsas. It can also be used in tacos, ceviche, or served as a simple pan-seared fillet with light seasoning.
