Fresh wild whole snapper is a premium seafood choice featuring sweetly mild but distinctive flavor with semi-firm, lean, and moist texture. U.S. wild-caught red snapper (Lutjanus campechanus) is sustainably managed and comes from domestic fisheries in the Gulf of America and along the Atlantic Coast. The fish is typically sold whole with its trademark red skin and red eyes intact, which helps with identification. Red snapper can grow up to 40 inches long and weigh 5-15 pounds, with enlarged canine teeth that give them their "snapper" name.
This versatile fish has pinkish meat with yellow tones when raw that turns lighter when cooked. It can be prepared multiple ways including pan-fried, grilled, roasted, broiled, baked, and steamed. When selecting fresh whole snapper, look for bright red skin, clear red eyes that are full and flush with the head, red moist gills, glistening pearly skin that adheres tightly to the flesh, and firm elastic flesh.
