Fresh wild whole red snapper is a premium, wild-caught fish sold per pound at Costco warehouse locations. Each snapper is sold whole with the head on, already cleaned and scaled for convenience, ready to cook. The fish is sourced from sustainable wild fisheries including waters from the Gulf of Mexico, the Atlantic, and select international fisheries such as Panama.
Red snapper is prized for its firm, lean white flesh and mild, slightly sweet flavor. Its delicate taste pairs well with bold seasonings such as chilies, citrus, fresh herbs, and tropical fruits. Scoring the fish with diagonal cuts before cooking helps seasonings penetrate and promotes even, consistent cooking throughout the body.
For oven roasting, bake at 425–450°F using the Canadian method of 10 minutes per inch of thickness. For grilling, cook 3–5 minutes per side over medium-high heat until the thickest part flakes easily with a fork. Store fresh red snapper refrigerated at 32–38°F and use within two days, or freeze at 0°F for up to six months.
