Fresh wild halibut steak is a premium, bone-in cut of wild-caught halibut sold by the pound at Costco's fresh seafood counter. Often called the "steak of seafood," halibut is prized for its firm, meaty texture and mild, sweet flavor, making it one of the most versatile and sought-after white fish available. The steak cut features snow-white flesh that holds its shape beautifully during cooking, delivering a restaurant-quality experience at home.
Wild halibut steaks are well-suited to a wide range of cooking methods, including baking, broiling, grilling, pan-searing, and poaching. The bone-in steak cut helps retain moisture during cooking, resulting in a juicy, flavorful piece of fish. Cook to an internal temperature of 145°F, allowing approximately 10 minutes per inch of thickness for thawed fish. Avoid overcooking, as halibut can dry out quickly — the flesh should be opaque, flaky, and moist when done.
