Fresh wild halibut roast is a bone-in center-cut section of Pacific halibut, sold by the pound. The roast cut is taken from the thickest part of the fish and retains the backbone, making it ideal for oven roasting or slow-baking where the bone helps retain moisture and flavor during cooking.
Pacific halibut is a premium flat fish harvested from the cold, clean waters of the North Pacific Ocean. It is prized for its mild, slightly sweet flavor and firm, dense white flesh that flakes into large, satisfying pieces when cooked. The fish is lean and high in protein, with an excellent nutritional profile rich in omega-3 fatty acids, selenium, and B vitamins.
For best results, roast in an oven preheated to 400–450°F for approximately 10–15 minutes until the flesh turns opaque and flakes easily with a fork. The bone-in roast cut is well-suited to herb crusts, Mediterranean-style preparations with olive oil, lemon, and garlic, or simply seasoned and roasted alongside vegetables. Basting with butter or olive oil during cooking prevents the lean flesh from drying out.
