Wild-caught Chilean Sea Bass, sold fresh at the Costco seafood counter and priced per pound. The fish is sourced from Australia, previously frozen at sea, and processed in the USA. It carries MSC (Marine Stewardship Council) certification, indicating it comes from a sustainably managed fishery.
Chilean Sea Bass — also known by its scientific name Patagonian Toothfish — is prized for its rich, buttery flavor and moist, tender texture with large, flaky white flesh. It is widely considered one of the most premium fish varieties available at Costco. The fillets are vacuum-sealed to preserve freshness.
To cook, pan-sear over medium heat with butter and fresh herbs for 10–15 minutes until the flesh is opaque and flakes easily. Finish with a squeeze of lemon juice. This fish is well-suited to baking, broiling, and poaching as well.
