Fresh bone-in whole pork leg, vacuum packaged for optimal freshness. Also known as "fresh ham," this is an uncured, unsmoked, and uncooked cut from the hind leg of the pig with a natural fat layer. This premium cut is ideal for roasting and delivers tender, flavorful results when cooked low and slow.
For best results, score the fat in a diamond pattern and season with herbs, brown sugar, salt, and pepper. Roast at 425°F for 30 minutes, then reduce to 300°F and cook for 22-26 minutes per pound until the internal temperature reaches 140°F. Let rest for 30 minutes before carving. The final internal temperature should reach 150-160°F after resting. Each pound of bone-in pork leg serves approximately 1-2 people.
