Previously frozen wild-caught whole black cod, sold by the pound from the Costco seafood case. Black cod, also known as sablefish (Anoplopoma fimbria), is a deep-water fish prized for its rich, buttery flavor and silky texture. Unlike standard Pacific or Atlantic cod, black cod has a significantly higher fat content, giving it a luxurious mouthfeel similar to Chilean sea bass.
Wild-caught black cod is sustainably harvested from the cold, deep waters of the North Pacific, primarily off the coast of Alaska. The whole fish preparation allows for versatile cooking options including roasting, grilling, smoking, or preparing traditional Japanese-style miso-glazed black cod. The high oil content makes it exceptionally forgiving to cook and resistant to drying out. Previously frozen at sea to lock in freshness, this whole black cod is thawed for convenient purchase and should be cooked within one to two days of bringing it home.
