Fiscalini Truffle Cheddar is a handcrafted, semi-hard cheese made by blending real truffle paste into Fiscalini Farmstead's award-winning Farmhouse Cheddar. The result is a rich, earthy cheese with the distinctive aroma and flavor of black truffles, marked by beautiful dark speckled coloring throughout. Sold as a random-weight cut of approximately 12 ounces, this item is priced per pound at the deli counter.
Produced at Fiscalini Farmstead in Modesto, California, the farm has been family-owned and operated for over 100 years since its founding in 1914 by Swiss immigrants. The cheese is made exclusively from the farmstead's own pasteurized cow's milk using vegetarian rennet and handcrafted in 40-pound blocks before being cut and packaged for retail. Fiscalini has earned numerous awards for its artisan cheeses. This truffle cheddar is produced with culinary applications in mind, and it pairs exceptionally well with charcuterie boards, gourmet sandwiches, pasta, and risotto.
