Fiscalini Old World Aged Cheddar is a premium artisan cheese made in the traditional English style at Fiscalini Farmstead in Modesto, California. This raw cow's milk cheddar is handcrafted into 60-pound wheels and remains Fiscalini's most celebrated and highly awarded cheese.

During its 14-month aging process, each wheel is wrapped in cheesecloth bandages to protect the rind while allowing the cheese to breathe and develop complex flavors internally. The result is a firm yet crumbly texture with a robust, buttery taste, straw-colored interior, and a nutty, slightly smoky, earthy finish. Sold at the Costco deli counter by the pound as a random-weight item.
