Smithfield pork spare ribs are known for their generous marbling and meaty bone structure, ideal for slow smoking, oven roasting, or grilling. For best results, cook to an internal temperature of approximately 195°F until meat pulls away from the bones. On the grill or smoker, cook at 275°F over indirect heat for 2 hours, then wrap tightly in heavy-duty foil and continue cooking for another 1.5 to 2 hours. In the oven, roast at 350°F for 1.5 to 2 hours, meaty side up. Finish with sauce during the last 15 to 30 minutes if desired.
