USDA Choice grade bone-in beef chuck short ribs, cut from the chuck section of the cow. This premium cut features rich marbling throughout the meat, making it ideal for slow cooking methods such as braising, smoking, or slow roasting. Chuck short ribs are known for their deep, beefy flavor and tender texture when cooked low and slow, as the connective tissue breaks down to create succulent, fall-off-the-bone meat. The USDA Choice grade indicates high-quality beef with moderate marbling, less than Prime but offering excellent tenderness, juiciness, and flavor. These bone-in ribs are sold by the pound with variable weight packages averaging 3-16 lbs depending on the cut. Perfect for Korean-style galbi, braised short ribs, or barbecue preparations. Best results achieved by cooking at low temperatures (around 275°F) until internal temperature reaches 203°F, similar to brisket preparation methods.
