USDA Prime whole beef ribeye roast, bone-in with lip on, sold vacuum packed by the pound. This premium cut represents the highest grade of beef, featuring abundant marbling throughout that delivers exceptional tenderness, juiciness, and rich flavor. The whole ribeye typically contains 7 ribs (bones 6-12) and weighs between 16-22 pounds average. The "lip on" specification means the outer cap muscle remains attached, providing maximum flavor. USDA Prime grade is awarded to only 5-8% of all U.S. beef, produced from young, well-fed cattle with superior marbling. The bone-in presentation helps the meat hold its shape during cooking, and the meat near the bone cooks 5-10 degrees cooler than the rest, resulting in extra juicy and tender pieces.
