This is a full case of USDA Prime bone-in beef rib, representing one of the finest cuts of beef available at Costco. USDA Prime is the highest federal quality grade, awarded to young, well-fed cattle that exhibit abundant intramuscular marbling โ the fat content that delivers superior tenderness, juiciness, and rich beefy flavor. Sold by the pound as a complete case, this product is ideal for restaurants, caterers, and large-scale gatherings requiring premium whole-primal beef.
A bone-in rib (commonly referred to as a standing rib roast or prime rib) is prized for the way the attached rib bones act as a natural rack during cooking, insulating the meat and promoting even roasting while contributing significant depth of flavor. Full cases typically contain a whole 7-bone rib primal, often weighing 20 to 25 pounds. Costco's whole bone-in prime rib cases are available in both loin-end and chuck-end cuts, with the loin end offering a larger center eye of meat and the chuck end providing more fat and marbling.
Best suited for dry-heat cooking methods such as oven roasting, smoking, or grilling. Plan on approximately 1 pound of bone-in meat per person. The exceptional marbling of USDA Prime beef means little more than salt, pepper, and aromatics are needed to produce restaurant-quality results. For optimal texture, bring the roast to room temperature before cooking and use an instant-read thermometer to achieve the desired doneness.
