This is a whole beef loin top loin, also known as a New York strip loin, sold per pound and graded USDA Prime. USDA Prime is the highest quality grade of beef, produced from young, well-fed cattle with abundant marbling throughout the meat. The marbling provides exceptional tenderness, juiciness, and rich flavor.
This whole loin typically weighs around 12 pounds on average and comes boneless in cryovac packaging. Customers need to trim and cut the whole loin into individual New York strip steaks at home. The cutting process is straightforward and similar to slicing a loaf of bread, though a larger knife is recommended. Some trimming of hard fat may be needed depending on the specific cut.
