The full case format (approximately 81 lbs average weight) is ideal for restaurants, butcher shops, and foodservice operations. The "lip-on" designation refers to the ribeye cap (spinalis dorsi) muscle remaining attached, which many consider the most flavorful and tender part of the entire ribeye.
This cut is versatile for preparation including grilling, sous vide, or oven searing. For grilling, cook 4-6 minutes per side over high heat for medium-rare.
