Fresh wild sablefish — also known as black cod — is a premium Pacific seafood prized for its exceptionally rich, buttery flavor and silky, melt-in-your-mouth texture. Wild-caught from the cold waters off Alaska and the Pacific Northwest, sablefish is one of the fattiest fish in the sea, giving it a naturally luxurious taste comparable to Chilean sea bass. It is sold per pound at the Costco seafood counter and is previously frozen to preserve peak freshness.

Sablefish is highly versatile in the kitchen and responds well to roasting, broiling, pan-searing, poaching, and smoking. Its high natural fat content makes it forgiving to cook — it stays moist and tender even under high heat. It is particularly well-suited to miso-based marinades, a preparation popularized in Japanese cuisine. The fillets are boneless and skin-on, with a characteristically dark, near-black skin on the exterior.
