Fresh Wild Taku Ivory King Salmon Fillet is a rare and prized specialty sourced from Southeast Alaska's Taku River region. Ivory King Salmon—also known as White King Salmon—is the same species as classic King Salmon (Chinook) but possesses a recessive gene that prevents carotenoids from being deposited into the flesh, resulting in a stunning ivory-white color. Only about 5% of King Salmon carry this trait, though in rivers like the Taku, the ivory population can comprise 15–30% of the total king run.
The ivory flesh is celebrated for its exceptionally silky, buttery texture and milder, more delicate flavor compared to red-fleshed King Salmon. Like all King Salmon, it is rich in Omega-3 fatty acids and has naturally high fat content that keeps it moist and flavorful during cooking. These fish are troll-caught—an artisanal method where each fish is individually hooked and handled while still alive—ensuring the highest grade and freshness.
