Morbier is a classic semi-soft French cheese originating from the Jura Mountains of the Franche-Comté region of France. It carries an AOC/AOP (Appellation d'Origine Protégée) designation, ensuring it is crafted under strict traditional standards using cow's milk from the region. The cheese is instantly recognizable for its signature horizontal layer of edible vegetable ash running through the center — a centuries-old tradition that began when cheesemakers pressed evening curd into a mold, covered it with ash to prevent drying, then added the morning curd on top the next day.
The ivory-yellow pâté is supple, springy, and silky in texture. Despite a pungent rind aroma, Morbier delivers a surprisingly mild flavor with fruity, complex notes and a pleasant nutty finish. It is aged approximately three months to develop its characteristic depth. The ash layer creates a dramatic visual presentation, making it a standout addition to any cheese board.
