This PDO (Protected Designation of Origin) certified cheese carries the sheep's head seal of authenticity and the pin dot words "Pecorino Romano" on the rind, guaranteeing its genuine origin and traditional production methods.
Aged for over 9 months, this mature Pecorino develops a distinct, sharp, savory flavor with a firm, crumbly texture. The cheese has a deep saltiness with an oily sheen and a pleasant pungent earthiness that distinguishes it from milder hard cheeses.
