Chicken paws are a versatile ingredient used in cuisines worldwide. They are ideal for making rich, gelatinous bone broth that gels when chilled due to the collagen breakdown. Popular preparations include Chinese-style dim sum with black bean sauce, Jamaican chicken foot soup with yams and dumplings, Indonesian soto soup, and Eastern European aspic (kholodets).
