Fresh wild opah fillet, also known as moonfish (Lampris guttatus), sold by the pound. Opah is a prized fish with a lean yet moist, meaty texture that falls somewhere between tuna and swordfish. The flesh presents a light salmon-orange to pink-rose color when raw and turns white when cooked, with a mild, sweet flavor that is not overpowering.

This versatile fish is excellent grilled, pan seared, broiled, baked, poached, steamed, or smoked. Opah provides multiple cuts ranging in color from light pearl pink to deep dark red, with the fillet typically cut from the tender top loin. Wild-caught and fresh, never frozen.

Opah is rated a "Good Alternative" by Seafood Watch. Because they don't swim in schools, they are typically caught one at a time by Pacific longline fisheries. Hook-and-line caught opah has been growing in popularity since Hawaii began promoting the species in the late 1980s, and today it is in high demand among restaurants and chefs.
