Fresh wild-caught Opah fillet, sold by the pound. Opah, also known as moonfish, is the world's only fully warm-blooded fish and is sustainably wild-caught year-round from waters off Hawaii and California. Its rich, firm flesh has a mild, slightly sweet flavor with a buttery texture that resembles a cross between tuna and swordfish, making it exceptionally versatile in the kitchen.
Opah is well suited for pan-searing, grilling, baking, and broiling. The thick fillets hold up beautifully to high-heat cooking methods and pair naturally with citrus, fresh herbs, and light glazes. The meat is deeply colored — ranging from pink to orange depending on cut — and stays moist when cooked to medium. It is a prized catch among chefs and home cooks alike for its rich flavor and striking appearance on the plate.
Opah is an excellent source of lean protein and heart-healthy omega-3 fatty acids. As a large pelagic species, it should be consumed in moderation consistent with FDA guidance on mercury in fish.
