Fresh wild-caught opah fillet, sold by the pound. Opah, also known as moonfish, is a prized deep-ocean fish found in tropical and temperate waters worldwide. It is one of the few fully warm-blooded fish species, which contributes to its uniquely rich, fatty flesh.
The flavor is mild and slightly sweet, often compared to a cross between tuna and swordfish, with a firm yet tender and buttery texture. Different sections of the fillet offer varying richness: the top loin is leaner and similar to tuna, while the mid-section is fattier and silkier, and the belly section is exceptionally buttery and well-suited for raw preparations such as sashimi or ceviche.
Opah is highly versatile in the kitchen. It holds up well on the grill at medium-high heat for 3 to 4 minutes per side, develops a crispy crust when pan-seared in butter and olive oil for 2 to 3 minutes per side, and can also be gently poached in a broth of white wine, garlic, lemon, and herbs. The flesh absorbs marinades and seasonings beautifully, making it suitable for a wide range of preparations. Store fresh opah refrigerated at or near 32°F and use within 2 to 3 days of purchase.
