Costco's fresh steelhead fillet is a farm-raised, boneless fillet with skin on, raised in Norway and sold fresh — never frozen — by the pound. Steelhead (also known as steelhead trout or steelhead salmon) is prized for its rich, buttery flavor and vibrant pink flesh, which closely resembles Atlantic salmon. Each fillet typically weighs around 2 pounds, making it an excellent choice for family meals or for portioning and freezing at home.
Steelhead is an outstanding source of lean protein and is rich in long-chain omega-3 fatty acids, which are associated with supporting cardiovascular health, reducing inflammation, and promoting overall wellness. The skin-on cut is particularly well suited for grilling directly on the barbecue grate (skin side down), baking on a parchment-lined sheet pan, or pan-searing in a hot skillet. It pairs beautifully with simple seasonings such as garlic salt, lemon pepper, or herbed butter. Leftover cooked steelhead can be used in salads, salmon cakes, or salmon burgers, making it a versatile protein for multiple meals throughout the week.
