Beecher's Flagship is a semi-hard cow's milk cheese with a uniquely robust, nutty flavor and ever-so-slight crumble. This signature cheese was the first wheel handcrafted when Beecher's Handmade Cheese opened its doors in Seattle's historic Pike Place Market in November 2003. Carefully aged for 15 months, Flagship develops complex flavors with hints of browned butter and caramel. Made exclusively from premium milk sourced from local dairies of Holstein and Jersey cows that have not been treated with bovine growth hormones, this artisan cheese is crafted in glass-walled cheesemaking kitchens at Pike Place Market using cultures typically used for non-cheddar cheeses such as Gruyère and Emmental.
This cheese has won multiple awards including Bronze at the 2025 World Cheese Awards and 2nd place at the American Cheese Society competition in 2022. The versatile flavor profile makes it outstanding on crackers, crumbled into omelets or frittatas, featured on artisan cheese plates, or added to macaroni and cheese recipes.
