Kirkland Signature Fresh Wild Rockfish Fillets are sold by the pound from Costco's fresh seafood section. These fillets are wild-caught Pacific rockfish, delivered fresh and never previously frozen. The fish is typically harvested from waters off the coast of British Columbia, Canada.
Rockfish is a mild white fish with medium-sized flakes and a firm yet tender texture. Its flavor is slightly stronger than cod but much milder and less oily than salmon, making it an excellent choice for those who prefer a delicate seafood taste. It is often used as a substitute for haddock in recipes.
The fillets are highly versatile and can be prepared in a variety of ways. Pan-frying with a light flour dredge yields a crispy exterior with a flaky interior. Air-frying in a foil packet with mustard, dill, and seasonings at 400°F for 5–6 minutes is another popular method. Rockfish also poaches beautifully, making it ideal for fish chowders and fish tacos. Cook to an internal temperature of 145°F in the thickest part of the fillet.
