Fresh wild-caught whole Onaga (Etelis coruscans), also known as Hawaiian Red Snapper or Longtail Red Snapper, sourced from Indonesia and processed in the USA. Sold by the pound, this premium whole fish is presented head-on and ready for your kitchen.

Onaga is revered among chefs and seafood lovers as one of the finest snappers in the world. It features beautiful brilliant-red skin and a distinctive long, swallow-like tail. The flesh is light pink and translucent when raw, with a creamy texture and mild sweetness. When cooked, it turns white with large, moist flakes and a delicate, sweet flavor. Fish caught during cooler months tend to have higher fat content, making them especially prized for sashimi and sushi preparations.

Wild-caught using sustainable hook-and-line methods, Onaga is a deep-water bottomfish typically harvested at depths of 600–1,000 feet around rocky outcroppings. It is versatile in the kitchen and well-suited for baking, grilling, steaming, broiling, sautéing, poaching, deep-frying, or serving as sashimi. Whole fish typically range from 1 to 18 pounds and yield approximately 38% skin-on fillets.
