J. Lohr Hilltop Cabernet Sauvignon is a premium red wine from Paso Robles, California, crafted from sustainably farmed, high-elevation vineyards throughout the appellation. This distinguished Cabernet is one of Paso Robles' best known and most iconic wines, sourced from three of J. Lohr's finest estate vineyards: 80% from the Shotwell Vineyard in the cool Templeton Gap-influenced El Pomar District, 10% from the Beck Vineyard at 1,700 feet elevation in the Creston District, and 10% from ranches in the mountainous Adelaida District.

The wine is a blend of 95% Cabernet Sauvignon, 3% Petit Verdot, 1% Malbec, and 1% Cabernet Franc, meticulously aged for 16 months in specially curated French oak barrels (40% new, very tight grain) to develop its signature character. The naturally stressed vines grow in dry, gravelly, and sometimes lime shale-laden soils where water is at a premium, enabling precise viticulture that produces dark fruit with resolved tannins year after year.

The 2021 vintage showcases unprecedented concentration and depth following a dry growing season that produced small, intensely concentrated berries. Extractable anthocyanin content reached an all-time high, with color density levels eclipsing the acclaimed 2007, 2013, and 2019 vintages. The wine opens with effusive aromas of fresh black cherry, hints of toasted pastry, baking spice, dark fruit, chocolate, mint, and cedar. Dense and soft on the palate, it features elegant layers of black and red currants with smooth, silky texture and grippy tannins that leave a bright, dry, long finish.

With its well-integrated oak influence and exceptional balance and structure, this complex and refined Cabernet shows astonishing purity of fruit upon release and has the structure to age gracefully for 10 to 15 years when properly cellared.
