USDA Select grade boneless beef sirloin tip knuckle, also known as beef knuckle or round tip roast, is a lean whole cut from the hindquarters of the cow, specifically the front portion of the rear leg. Sold as a random-weight whole knuckle averaging approximately 13 lbs, priced per pound. USDA Select grade beef is uniform in quality and leaner than Choice or Prime grades, offering a good balance of tenderness and value with less marbling.
This is a highly versatile sub-primal cut that can be fabricated into roasts, pot roasts, steaks, stew meat, or kebab cubes. Because of its leanness, it benefits most from slow, moist cooking methods such as braising in beef broth or red wine, or from marinating before grilling. It can also be sliced thin for use in stir-fry dishes or pinned for cube steaks.
