Wild-caught whole octopus sourced from the Philippines, previously frozen for optimal tenderness. This raw seafood product is sold by the pound and requires preparation before cooking. The octopus has been flash-frozen, which naturally tenderizes the meat by breaking down tough fibers, making it easier to achieve a tender, succulent texture when cooked properly.

Preparation involves thawing the octopus in the refrigerator for 24 hours or in cold water for faster results, then removing the beak and rinsing thoroughly. Common cooking methods include boiling for 45 minutes in seasoned water with sea salt, garlic, and red wine vinegar to tenderize, followed by grilling for 4-5 minutes per side to add char and flavor. The octopus can also be baked in foil with olive oil and herbs, or prepared sous vide for precision cooking.
