Fresh wild-caught Opakapaka, also known as Hawaiian Pink Snapper or Crimson Jobfish (Pristipomoides filamentosus), sold by the pound as skinless or skin-on fillets. Opakapaka is one of Hawaii's most prized reef fish, harvested from deep Hawaiian waters by local fishermen using hook-and-line methods that minimize environmental impact.
The flesh is light pink to nearly translucent with a mild, sweet, clean ocean flavor and a delicate, moist texture. It is lean, low in fat, and a rich source of high-quality protein, niacin, vitamin B6, vitamin B12, phosphorus, and selenium. Opakapaka is well suited for a wide range of preparations including sautéing, baking, grilling, steaming, and sashimi-style raw presentations.
