Fresh wild-caught Pacific sea bass fillets sold by the pound, available at Costco's fresh seafood counter. Pacific sea bass — often referred to as white sea bass — is a highly regarded Pacific Coast fish prized for its clean, mild flavor and firm, white flesh. Because it is wild-caught from Pacific waters rather than farmed, it delivers a pure oceanic taste without any muddy or off-flavors.
These fillets are a lean, nutrient-dense protein option. A 3-ounce cooked serving contains approximately 105 calories, 20 grams of protein, and just 2 grams of fat, along with meaningful amounts of omega-3 fatty acids, selenium, phosphorus, and vitamin B12 — nutrients that support heart and metabolic health.
Pan-searing is an ideal preparation: cook fillets over medium-high heat with butter or olive oil for 4–6 minutes on the first side until a golden crust forms, then flip and cook an additional 3–4 minutes until the flesh is opaque and flakes easily. The fillets also perform well broiled, baked, or grilled. They pair naturally with lemon, fresh herbs, capers, garlic, and light sauces. Being sold fresh by the pound allows you to purchase only as much as you need.
