Fresh Wild Opakapaka (Pink Snapper) is a premium Hawaiian deepwater fish (Pristipomoides filamentosus) celebrated for its delicate flavor and firm, light pink flesh. Considered Hawaii's finest snapper, opakapaka is prized by chefs and home cooks alike for its versatility and clean, mild taste. This fillet is sold per pound, allowing flexible portioning for a variety of dishes.
Opakapaka is caught exclusively by deepwater handline gear with power reels at depths between 180 and 600 feet off the Hawaiian Islands. This sustainable, line-caught method minimizes bycatch and ensures a premium-quality, fresh product. The fish is harvested year-round, with a peak season from October through February when fat content is highest and the flesh is best suited for sashimi. Fish range from 1 to 18 pounds, and Hawaiian opakapaka grow larger than anywhere else in the South Pacific.
The fillets are well suited for a wide range of preparations including sashimi, baking, steaming, poaching, sautéing, and soups. Opakapaka is an excellent source of lean protein, low in saturated fat and sodium, and provides approximately 275 mg of omega-3 fatty acids (DHA and EPA) per 4-ounce serving.
