Fresh wild-caught opah fillet, also known as moonfish (Lampris guttatus). Opah is a large, deep-sea fish prized for its rich, versatile flesh that varies in color and texture depending on the cut. The upper loin offers a firm, fatty texture similar to tuna, while belly portions are richer and more marbled.
Opah has a mild, slightly sweet flavor often compared to a cross between tuna and swordfish. It is excellent seared, grilled, baked, or served as sashimi. The flesh turns white and flaky when cooked, making it suitable for a wide variety of preparations. Wild-caught opah is a sustainable choice harvested primarily from the Pacific Ocean.
