Wild-caught cold water rock lobster tails sourced from the pristine, icy waters surrounding Tristan da Cunha — the most remote inhabited island in the world, located in the South Atlantic Ocean approximately 1,700 miles off the coast of South Africa. Sold as a full case priced per pound, these tails are flash-frozen to lock in peak freshness immediately after harvest.
Tristan da Cunha lobster tails are internationally recognized as a premier lobster species, prized for their extraordinary sweetness, succulent texture, and clean, mild flavor. The deep, cold, unpolluted waters of Tristan da Cunha produce lobster with meat that is noticeably more tender and flavorful than warm-water varieties. These qualities make them a favorite in upscale restaurants and among home chefs preparing surf and turf dishes or elegant seafood entrées.
These lobster tails can be prepared by boiling, broiling, grilling, baking, or pan frying. To broil, preheat the oven to the broil setting and cook for approximately 1 minute per ounce of tail weight. To boil, place tails in a seasoned boiling broth and cook until the shells turn bright red and the tails curl. The meat is fully cooked when it appears white and opaque throughout, with no translucency. To thaw frozen tails, place in the refrigerator for 12 to 24 hours before cooking — do not force-thaw under running water.
