Fresh wild-caught ivory king salmon fillet, sold by the pound. Ivory king salmon is an exceptionally rare variety of chinook (king) salmon, with only about 5% of all king salmon carrying the recessive gene that produces their distinctive ivory-white flesh. Unlike the typical deep red-orange color found in most king salmon, the ivory variety cannot process the carotenoid pigments from crustaceans in their diet, resulting in a striking white or marbled appearance.
Despite the color difference, ivory king salmon is nutritionally identical to red-fleshed king salmon, with the same high levels of omega-3 fatty acids, protein, and essential vitamins. The ivory flesh is actually even more densely oiled than standard king, producing a super-premium product prized for its exceptionally buttery, rich, and mild flavor with a delicate, large-flake texture. Many fishermen keep ivory kings for themselves when they catch one, making them a true delicacy.
A 3 oz serving of king salmon provides approximately 1,476 mg omega-3 fatty acids, 22 g protein, 2.4 mcg vitamin B12, 130 mcg vitamin A, 430 mg potassium, and 40 mcg selenium. The high oil content makes it excellent for grilling, baking, sauteing, or smoking.
